Are you a curry fan? I think Curry adds a warm, earthly something to a dish. You know…when you eat something and wonder what that unique spice is or that touch of heat?

So let’s get cooking with one of the easiest curry dishes I have found in a long time. I like that it can be made ahead of time or left alone once placed in the slow cooker.

Coconut Pork Curry combines coconut milk with a wonderful blend of spices that make your home spell amazing!

Coconut-Pork-Curry (1)

Ingredients:

  • 3 Tablespoons oil (your choice)
  • 3 Tablespoons butter
  • 4 Pounds Pork Roast (about 6 pork chops), cut into bite size pieces
  • Salt and Pepper
  • 2 Onions, diced
  • 3 Garlic Cloves, minced
  • 3 Tablespoons Ginger, minced
  • 3 Tablespoons Curry Powder
  • 3 Tablespoon ground Cumin
  • 1 Tablespoon ground Turmeric
  • 1 bunch Cilantro, chopped
  • One 14-ounce can diced tomatoes (with juice)
  • 1 can unsweetened coconut milk
  • 1 box Mushrooms, sliced (or 2 cans drained)
  • 3 cups chicken stock or broth
  • 1 box Noodles (prepared just before serving)

Directions:

  • Heat oil and butter in a deep skillet or on brown setting on slow cooker.
  • Add pork to the skillet and brown it over moderately high heat, about 10-12 minutes.
  • Using a slotted spoon, remove the meat from the skillet or cooker, cover to keep warm.
  • Once all the meat has been browned, drain off most of the oil from the skillet (or cooker), leaving about 3 tablespoons and reduce the heat to low.
  • Add the onion, mushrooms, garlic, ginger, curry, cumin and turmeric and cook over low heat, stirring until the onion starts to softened, about 5 minutes.
  • Stir one cup of chicken broth into the onion and spice mixture to release the bits stuck to bottom of pan.
  • Return the pork to the cooker with the onion/spice mixture and the tomatoes, coconut milk, cilantro and the remaining stock.
  • Stir gently to mix.
  • Cook on high for 4-5 hours or low for 6-8.
  • Serve with rice or noodles.

This recipe makes a lot of coconut curry pork. And depending on how much rice or noodles you like, it will serve a large family with left overs.

Super easy to double and freeze a second meal for later or to take to a friend who needs a little loving.

Like a little more spice? Offer little dishes of spices for individual preference. Your deviled egg tray is a convenient way to offer spices to your guests
